You've Been Making Pasta Wrong, And Your Sauce Has Been Paying The Price

You drain your pasta, rinse it under the tap, tip on the sauce, and wonder why it slides off into a sad puddle at the bottom of the bowl. Two habits are quietly sabotaging every plate you make.
First, do not rinse. That cloudy coating of starch on the pasta is exactly what helps sauce grip and cling. Rinse it away and you strip off the glue that binds everything together.
Second, save a mug of that starchy cooking water before you drain. A splash stirred into your sauce loosens it, emulsifies the fat, and pulls the whole dish into something glossy and cohesive.
