Why You Should Never Rinse Mushrooms Under The Tap
That quick wash is doing more harm than you think.
Blasting mushrooms under the tap feels sensible, but it works against everything you want from them.

Mushrooms are like little sponges. Soak them and they drink up water, which then steams them in the pan instead of browning.
Waterlogged mushrooms go grey and rubbery, never reaching that deep, golden, savoury sear that makes them worth cooking.
Instead, wipe them with a damp cloth or give them a quick brush. A little dirt washed off in seconds beats a soggy, flavourless plate.
