Honey is a supersaturated sugar solution, and over time the sugars naturally form crystals. Cold storage speeds it up.

To bring it back, stand the jar in a bowl of warm water and stir gently until it clears. Skip the microwave, which can scorch it.

Keep honey at room temperature with the lid tight, away from the fridge. Stored properly it lasts for years without truly spoiling.
